  • Friday Love #3

    We keep things simple around here for Valentines Day.
    The girls and I baked a cake together. They colored 20,000 Valentine pictures for me.
    and we baked cookies to give away.

    Jeff had to work late, so we waited until past bedtime to eat our cake, so he could join us.
    Some of us were in jammies by then. 

    The cake doesn’t look like anything special, it’s baked in my use-for-everything-old-old-pan,
    but let me tell you it is one of our new favorite desserts.

    You see, I’m not really a huge fan of cake, but this one….It was SO good!  
    So good that the boys asked if I could make it for their birthdays.
    So good that I had a piece before breakfast. So good that I want to make another.

    So good I’m going to share the recipe with you.

    Golden Butter Cake
    1 3/4 C. sugar
    2/3 C. butter, softened
    2 eggs
    1  1/2 tsp. vanilla
    3 C. flour
    2 1/2 tsp. baking powder
    1 tsp. salt
    1 1/4 milk ~ {I used buttermilk….it works so much better}

    {We added fresh strawberries cut into pieces to our batter…about 2 cups worth}

    Beat the first 4 ingredients together until smooth. Mix dry ingredients together, add alternately with milk. Pour into a 9×13 pan, bake at 350 degrees for 30 minutes.

    Cream Cheese Frosting
    1/2 pound powdered sugar
    1/2 stick butter
    1 -3 oz package of cream cheese
    1 tsp. vanilla

    {I also added a dash of milk…about a half of a teaspoon}

    Mix ingredients. Beat until smooth.

    *We ate the cake while it was still a little warm, try it that way too if you can.

     
    So what I love on this Friday…..celebrating whether big or small with my family.

  • What a fun little valentines party! The cake sounds amazing. Anything with strawberries AND cream cheese has to be a winner! I want to try that sometime. Going to email this to myself!:) Hope you’re having a great weekend. I’m enjoying a bit of down time here home alone as Jeremy has the three oldest at the library and my youngest is sleeping. This never happens and I don’t even know what to do with myself!:) I think I’ll do some cleaning…

  • That cakes sounds fabulous.  I cheated and used a cake mix to make cupcakes on VDay, but added chopped red strawberries to the batter and it made them umpteen times better.  I can’t believe I never thought to do that before.  And you’re right, cream cheese frosting makes everything better!

  • Looks like a happy Valentine’s day!  I’ve been wanting a real cake recipe instead of the out.of.the.box kind but hadn’t found one.  This one looks like the perfect one.  Love your old old pan.  So cute!
